ZINGY ZAAZEE MOTHER’S DAY MUFFINS

To help celebrate the women in your life on Mother’s Day, ZAAZEE has enlisted the help of Manchester health food blogger, SpamellaB, to create some awesome, guilt-free, Zingy ZAAZEE muffins.

Packed with clean ingredients, including Organic Cacao Powder from fellow Manchester brand, Kaizen Living, these amazing chocolate muffins are spiked with ginger chunks and hints of orange.



Guilt-free Chocolate, Orange & Ginger Muffins

Ingredients:

  • 1 cup buckwheat flour
  • ½ cup ground almonds
  • 2 tbsp Kaizen Living cacao powder
  • ½ cup natural sweetener (stevia or xylitol)
  • 2 tsp ground ginger
  • 2 tsp baking powder
  • 2 tbsp chopped crystalised or stem ginger
  • Zest and juice from 2 oranges
  • 2 eggs
  • ¼ cup coconut oil, melted
  • 1 tsp vanilla extract
  • Juice of 1 orange
  • 4-6 tbsp almond, coconut or soya milk

Get baking!

Preheat the oven to 190 degrees C and lightly grease a 6 cup silicone muffin mold ‘tin’.

Put the dry ingredients in a large bowl and stir well.

Whisk the eggs, then add the coconut oil, vanilla extract and orange juice. Pour into the dry mixture along with the orange zest and crystalised ginger and fold in gently, being careful not to overmix. 

Add 4 tbsp of the milk and see if you need to add more – you’re looking for a thick, batter-like texture, not too stiff or too runny. 

Spoon into the muffin cases so they are about a third full (you may have a little of the mixture left!) and bake for 15-20 minutes, until risen and a skewer comes out clean. Leave to cool then turn out onto a wire rack.

For the chocolate orange frosting:

  • 50g no added sugar dark chocolate
  • 2 tbsp coconut cream
  • Grated zest and juice of 1 orange
  • 1 tbsp Kaizen Living cacao powder
  • 1 tbsp coconut oil

Heat a small pan with water, bring to the boil then simmer. Break the chocolate into a heatproof bowl and place it over the pan, not letting the water touch it. Melt, remove from heat, the stir in the other ingredients (you want the coconut oil to melt in with the mixture). Leave to cool, then chill in the fridge for a couple of hours or overnight, to thicken up.

Ready to decorate? Simply spoon over some of chocolate frosting on the top of each muffin (you only need enough to cover as it is quite rich!). Scatter over a little more orange rind for decoration and add a few small pieces of stem or crystalised ginger. Now enjoy with your favourite women in your life and indulge, guilt-free!
